I think a part of the reason for this is that the vast majority of songwriters were musicians first and foremost who eventually wanted to write their own music. Then, they realized they wanted to write music with vocals and knew they could just have "Ahs" and "Oos" for the whole song, so had to learn to write lyrics.
If more of us were poets first and foremost, we might have an easier time!
